Marc is currently Food Historian, Historic Royal Palaces. He trained in Ceramic history, form and construction. He was a Museum Education Officer. His first work for Hampton Court in 1991 was the reconstruction of the Tudor kitchens, and then, for the first time, using that space for experimental work. This continued under the guidance of food historian Peter Brears FSA until in 1998. In 2003 Marc took over the project co-ordination of the Historic Kitchens of Hampton Court Palace. This has involved looking at the centuries of occupation of the Royal kitchens, and the social history of the Palaces through food. He also led the reconstruction of George II’s Chocolate Kitchen at Hampton Court, the subject of his 2015 lecture to the Antiquaries. His work for the Royal Palaces has seen him lecture all over England, America and Canada, including lectures in Kensington Palace, and he has featured in many TV and Radio programmes. He has written over twenty, mainly children's, books
